A great crustless spinach quiche
- 10 ounces of frozen chopped spinach
- 4 ounces of reduced fat cheddar cheese
- 1/2 tsp. of ground nutmeg
- 2 cups Egg Beaters®
- 1/4 cup chopped white onions
- Allow the spinach to thaw and drain out the excess water.
- Mix all the ingredients together in a bowl.
- Use cooking spray to grease a muffin pan.
- Pour the mixture in 1/2 cup portions into the muffin pan.
- Bake at 350 degrees for 20 minutes.
- Sprinkle with salt and pepper to taste.
