- 5 fresh Italian or plum tomatoes
- 1/4 average red onion, sliced thin
- 1 fresh medium-sized Cucumber
- 2 Tbsp extra virgin olive oil
- 2 Tbsp red wine vinegar
- In a bowl, mix the tomatoes, onions, and cucumber with the olive oil and red wine vinegar.
- Add salt and pepper to taste.
- Let stand for approximately 15 minutes. Toss again and serve.
Tip: You may serve this crisp salad chilled as well
